Food Blogger Connect (#FBC14)


Take one beautiful building.


Add in some beautiful, food loving people,


A sprinkle of speakers and people to teach you the ins and outs of vlogging, food photography, styling and writing,


Plenty of sticky fingers and full stomachs from the street food vendors,


And liquor.

(Jazzy nails, optional) 

And you have all the ingredients for a lovely three day food blogging conference. 






It was a ridiculous amount of fun; learning and meeting some really lovely people (especially Freddi, Federica and Christina!)

Ndali Vanilla Gift Swap: Pear & Vanilla Jam

This is one of the gifts I took along to the Ndali Vanilla Event at Fortnum & Mason




Pears are a really hit and miss fruit for me. Buy them rock hard and you start the waiting game of the fruit bowl. A squeeze one day might be akin to fondling a rock. The same squeeze, another day, might leave you frowning and searching for a tissue.


Blush pears are one of my favourites. Ruby red and shiny. The contrast between that and their pure white flesh reminds me of fairytales. I hunted for blush pears for this recipe, hoping that some tinge of of their colour might seep into the jam, but settled for a mix of sturdy conference and dessert pears.




Ingredients

1.4kg peeled, cored and chopped pears (1.4kg prepared pears. I used a mix of firm dessert and conference pears)
600gr jam sugar (sugar with added pectin)
125ml water
2 Ndali vanilla pods, split and seeds scraped out




Makes around 2 pints jam

Method

1, In a large heavy based saucepan, add all the ingredients (except the vanilla) together and set over a low medium heat. Pop a couple of saucers in the fridge for jam testing later.
2, Heat and stir gently until the sugar has dissolved. Bring up to a rolling boil, add in the vanilla seeds and pods, stirring occasionally until the pear are soft.
3, Fish out the vanilla pods and blend 2/3 of the jam until smooth and return to the pan.
4, Test whether the jam is ready by dropping a small amount on a chilled saucer and leaving until cool. The jam should wrinkle slightly when touched. My jam measured a temperature of just over 105o/c on a jam thermometer.
5, Pour into sterilised jars, wipe clean and seal

Next time I make this jam, I will probably only use one Ndali vanilla pod, the quality and strength really surprised me!

Ndali Vanilla Gift Swap

On Monday, I attended the Ndali Vanilla Gift Swap at Fortnum & Mason, hosted by the ever affable Vanessa Kimbell. It was great to talk to new and old faces and catch up on what had been going on over the past year since the last gift swap.

Vanessa's speech on organising the event and her experiences in Uganda really hit home the importance of using Fairtrade goods. It was wonderful chatting to other bloggers, as well as representatives from the Fairtrade Foundation too.







The preserves table. I was surprised to see the variety and popularity, from soft to firm sets, the fresh and fruity, the citrussy and the exotic.

Huge congratulations to all the winners, there really were some beautiful and inspiring gifts!

Ndali Vanilla Gift Swap




Out of all the regular baking ingredients, I think vanilla is the most overlooked. I care about the humble free range egg, creamy British butter, flour and sugar. A fair price for our dairy farmers and their milk. Try and buy fairtrade chocolate and coffee etc when/where it is available. But vanilla? I've sloshed teaspoons of extract and paste here and there without really thinking about the source.


It wasnt really until Vanessa Kimbell wrote and spoke of her trip to Uganda with Ndali vanilla, that it pricked up a few ears and led me to research more into where our vanilla comes from. Vanessa has organised a Vanilla Gift Swap at Fortnum & Mason thi

Let's Make Christmas: The Big Event

After weeks of watching all the delicious things popping up all over the foodie blogosphere, the event 50 brilliant food bloggers had all been looking for took place on Friday 18th November at Fortnum & Mason.

Created by the gorgeous Vanessa Kimbell, Let's Make Christmas has given us the opportunity to actually meet bloggers face to face and discuss all things food and beyond.

Each of brought gifts to swap. I took along some Triple Ginger Cakes baked in Kilner jars, some Glittery Chilli Vodka and some little Meringue Nibbles. These are the laden gift tables, the baked one proving to be very popular!

After judging the entries, baking king Dan Lepard announced the winners. Congratulations to them all! Can't wait to see the recipes!

It was really lovely chatting to some new and old bloggers alike including Laura from Craftstorming, Julia from Eat Healthy But Tasty, Kate from Turquoise Lemons, Kate from What Kate Baked and Choclette from Chocolate Log Blog.
These are the gifts I received in the swap. Some lovely Blackberry Liqueur from A Trifle Rushed, some Table Truffles from What Kate Baked and some Christmas Feel Good Cookies from Cindy at Food for Thoughts. All of which, I can personally say are delicious. Jim was very impressed too!

Overall, it was a great day spent in great surroundings with even greater people. I honestly hope we can all meet up again very soon!
