Chocolate Courgette Brownies

What do you do when you have armfuls of these?

Or you’ve picked one that is the size of your torso?

And you still have thousands growing in the garden?



Announce a culinary war upon them.  Add this recipe for moist and not overly sweet brownies to your arsenal.

Ingredients
120ml vegetable oil
200gr golden caster sugar
100g dark brown sugar
2tsp vanilla extract
250gr plain flour
50gr cocoa powder
1 ½ tsp baking powder
1tsp salt
250gr courgette, coarsely grated
75gr chopped good dark chocolate

Method
1, Preheat your oven to 180o/c and line a 9 inch square cake tin/baking dish with baking paper.
2, Blend the vegetable oil together with the sugars and the vanilla extract until smooth.
3, Stir in the flour, cocoa powder, baking powder and salt.  The ‘batter’ will be very dry.  Keep your cool.
4, Stir in the courgette and chocolate chunks and stir really well until all the courgette is well covered.  Bear in mind the courgette will release a lot of water when it’s cooking so it looks really dry now but it will leave you will a really nice moist brownie.  Eggs aren’t missing off the ingredient list.  Trust me. 
5, Spoon and spread the brownie mixture evenly in the lined tin and bake for 25 minutes. 
6, Leave to cool in the tin, slice and serve.

  2. Hilarious photo with the giant courgette. It is hard to keep on top of their manic growth although mine haven't been great this year (too much rain in Scotland)-brownies look fab.

  3. Marrow brownies methinks! They do get away if you're not looking those courgettes. The brownies look delicious. Still have several chocolate and courgette cakes to make, so here's another one to add to my list for next year.

  5. How do they compare to normal brownies. Would be good for my boys, I reckon - I could feel no guilt at all in feeding them to them.

  6. Good idea. I've been knee-deep in courgettes at times this year (I'm not complaining!). Brownies will make a nice change from the corgette cake that I normally eat as a dessert after my courgette curry with courgette chutney.

  7. Thanks everyone! I justified eating some big slices of them because "they have veg in them"!
    I honestly cant rid myself of them this year, going to start leaving them on neighbours doorsteps in the night!
    Please Do Not Feed The Animals - you dont get that cloying sticky-sweetness that you do with traditional brownies but I found them more palatable because they weren't too heavy. I wouldnt advise telling people that they are made of courgettes... until they have snaffed a big slice down!

  11. Those zucchini were thirsty! It doesn't take much, right? Forget about the garden for a few days and they grow up so fast. I have yet to bake something chocolately with zucchini. Your brownies look and sound great though!

  14. Tried these today. They are a little too sweet for my tastes (next time I'll reduce the sugar by about 50g) but otherwise they were really delicious. I probably threw in a third of a cup of strong coffee (and maybe some sneaky toffee vodka) and a little extra cocoa powder, but my mix was a lot wetter than I was expecting it to be. Looked exactly like normal brownies! And upon tasting, I found that they were really quite lovely. Definitely will make again!
